Which one should I prefer for an AME: Indian Aviation Academy, Mumbai or Ahmedabad Aviation and Aeronautics- Ahmedabad and why?

Indian Aviation Academy has an upper hand in the comparison between the two colleges. Placement scenario is better in the former one. Ahmedabad Aviation and Aeronautics, Ahmedabad, is also a well-known name in the field of flying training schools. As can be expected, it has it's own aircraft and operates from the international airport at Ahmedabad as well as the airport at Mehasana. The attached link will give further information if required.

conclude, I would give my vote to the academy at Ahmedabad since, with access to two airports, the condition of achieving minimum flying hours to obtain the licence will be met earlier here than with the academy in Mumbai.
