I believe this question is pretty important for home/office users

I keep my all important data on raid 1 disks in case of hdd failure

Recently one of my raid 1 disk started to noise so i decided purchase bigger size 2 x disk to replace current raid 1 system

I am using P8Z77-V motherboard raid system

Features

Intel® Z77 chipset :
2 x SATA 6Gb/s port(s), gray
4 x SATA 3Gb/s port(s), blue
Support Raid 0, 1, 5, 10
Supports Intel® Smart Response Technology, Intel® Rapid Start Technology, Intel® Smart Connect Technology
ASMedia® PCIe SATA controller : *6
2 x SATA 6Gb/s port(s), navy blue

Now i am planning to upgrade to new system with following one of the below scenarios

Scenario 1

1: I plug one of the new purchased disk to the computer as a regular harddisk. 
2: Copy all info on my current raid 1 system to disk new harddisk. 
3: Remove current raid system completey from computer
4: Plug another pair of new harddisk and build raid 1 config from bios
5: In windows Intel Rapid Storage Manager will sync new raid system 

Q1: after Scenario 1 case 5 how will windows know that which hdd to synch ? I mean it can synch data having one to empty one which will result in complete data loss ? What is the working logic

Scenario 2

1: Remove current raid 1 harddisks from the system
2: Plug new harddisks to the system and build them as raid 1 from bios
3: Plug one of the removed raid 1 harddisk to the system (the current one)
4: In windows copy data on previous raid 1 harddisk to the new raid 1 system

Q2: So which scenario is better ? Why ? Which one you would prefer ?

If you've enough empty slots i suggest you to install both new disks and create a new RAID 1 volume, then you can simply copy all data to this new volume, remove the older disks and delete the obsolete volume.
